Ingredients:
- 200g spaghetti
- 2 eggs
- 50g pancetta or bacon
- 50g grated Parmesan cheese
- Salt and pepper to taste
Instructions:
1. Cook spaghetti according to package instructions until al dente.
2. While spaghetti is cooking, fry pancetta or bacon in a pan until crispy.
3. In a bowl, beat eggs with Parmesan cheese, salt, and pepper.
4. Once spaghetti is done, reserve a cup of pasta water and drain the rest.
5. Add cooked spaghetti to the pan with pancetta or bacon and toss to combine.
6. Remove from heat and quickly stir in the egg and cheese mixture.
7. If the sauce is too thick, add a little reserved pasta water.
8. Serve immediately with extra Parmesan cheese on top.

1. Preheat oven to 375°F (190°C).

3. Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
4. Sprinkle shredded cheese on top of each stuffed bell pepper.

- 2 chicken breasts, sliced into strips
- 1 bell pepper, sliced
- 1 carrot, sliced

- 1 tablespoon vegetable oil
